Pastry Assistant

The team behind the newly opened Hotel Ulysses in Baltimore is actively seeking candidates for the position of Pastry Assistant for immediate hire.

ASH Hotels designs, develops, owns and operates a very special collection of properties. In our world, a hotel is much more than a destination to meet, dine, or sleep. Rather, it is a dynamic site of imagery and emotions, interactions and sensations manifesting within the walls of a beautifully restored local legend - a living movie set.

In the fall of 2022 ASH Hotels opened the doors of Hotel Ulysses, a place where wanderers from anywhere can come for one-of-a-kind experiences whether they are popping out of their Baltimore studio for a drink or need a place to stay during their east coast tour. To venture into Baltimore’s rich history and vibrant community by way of the landmark Latrobe building feel’s only natural — an icon with a checkered past that has been restored to carry on its legacy. Nestled into the neighborhood of Mt. Vernon, the sprawling site will have 116 rooms for stay alongside an eccentric cocktail lounge and an all-day salon style café that will serve breakfast, lunch, aperitivo and dinner.

About you

The Pastry Assistant is responsible for early morning Pastry preparation and production. This is a part-time position that will be less than 30 hours. The Pastry Assistant will report directly to the Pastry Chef.

Role & Responsibilities

The essential functions include, but are not limited to the following:

  • Assist in coordinating all training activities for bakery and other production and service employees
  • Follow the recipe guidebook and plating requirements as outlined by ownership. If a recipe or standard needs to be updated communicate these changes to ownership and make the required adjustment as needed. Manage and minimize food waste.
  • Assist in overseeing and enforcing all food handling SOP’s established at the restaurant including but not limited to; HACCP plans, HACCP logs, sanitation and dishwashing, product rotation, waste disposal and food borne illness reporting.
  • Making periodic and regular inspections of units to observe quality of food preparation and service, food appearance, and cleanliness and sanitation of production and service areas, equipment, and employee appearance.
  • Adhere to all local, state, and federal health department codes.
  • Performing other work-related duties as assigned.

Preferred Skills & Qualifications

  • Has at least 1 year of pastry experience, ideally within hotels and/or lifestyle concepts.
  • An understanding of baking and pastry techniques, production, and a basic understanding of how to use kitchen equipment.
  • Comfort with all facets of bread productions, including mixing, shaping, and baking
  • Experience with laminated doughs and production of sweet and savory Viennoiserie, pastries and dessert items for the café, restaurant, and pub.
  • Experience with ice cream and sorbet production.
  • Excellent organizational and multi-tasking skills
  • Has exceptional communication skills - there is no such thing as over communicating
  • Works well in a team environment and naturally exudes professionalism
  • Is confident in utilizing and learning new technologies
  • Can work well under stress or in high-pressure situations
  • Must be able to lift up to 20 pounds regularly and up to 50 pounds on occasion. Must be able to stand, walk, and work on feet for extended periods of time. Requires grasping, writing, typing / keying, extended periods of standing, walking, repetitive motions, hearing, and visual acuity.
