Basic Job Function:

To create and forge relationships with guests, members, and staff which continues to promote the Sea Island legacy of warm genuine hospitality. Lead and direct members of the service team on day to day operations and organization. Assist in dining and wine service standard training. Provide food and beverage service in an efficient and courteous manner that is in accordance with Forbes 5-Star standards. To be attentive and responsive to guest needs and acts to achieve a pleasant and memorable dining experience while uphold and assure compliance with all company and departmental policies and procedures.
Minimum Requirements:

  • Minimum three (3) years experience in related field
  • Experience working for a four or five diamond/star property preferred
  • Court of Master Sommeliers Certified Sommelier or equivalent experience
  • Extensive wine, service, & food knowledge
  • Excellent Communication skills, both written and verbal
  • Understanding of Forbes 5-Star dining standards
  • Familiarization with restaurant POS systems
  • Proficient in Windows XP and Microsoft Office software applications such as: Word, Excel, and Outlook

  • If applicable, must be flexible to working days, early mornings, evenings, weekends, and holidays
  • Report to work at the scheduled time, neatly groomed and in compliance with company Dress Code Policy
Tasks/Responsibilities:

  • Maintaining current knowledge and understanding of Forbes 5-Star dining standards
  • Maintaining current knowledge of the sequence of service
  • Willing and able to work in a team format
  • Assists Wine & Spirits Director with all aspects of beverage; training, sales, service, food and wine pairings
  • Maintains updated knowledge of daily wine and beverage changes and can communicate effectively to staff and others
  • Ability to delegate authority and manage a team effectively
  • Work with the Wine Director and the sommelier team to organize wine cellar inventories and maintain cost
  • Ability to work and supervise in all settings (bars, dining rooms, banquets, wine cellar, etc…)
  • Assure completion of wine carts for service prior to guest arrival, including the supplying of side stands, setting of and inspection of all tables glassware for cleanliness, and correctness of settings
  • Assure completion of wine carts and cellar stocking for closing side work
  • Assist in weekly dining and wine service standard training
  • Communicate with kitchen staff to advise them of guest needs and requests
  • Act to promote a cordial and accommodating atmosphere for diners
  • Communicate and cooperate with supervisors and coworkers before, during, and following dining service to achieve coordinated food and beverage presentation
  • To work in concert with the Stewarding Team to be responsible for hygiene, safety and sanitary conditions in accordance with state and local department authorities
  • Assist in monthly inventory of wine cellars and storage areas
  • Learn the names and personally recognize our regular Guests and Members
  • Be attentive, accessible, and responsive to diners
  • Monitor diners' satisfaction frequently and anticipates needs without requiring directions
  • Assure that guest wine orders are recorded and billed accurately into the POS system using guest/member cards
  • Continues all ongoing wine and spirits training for supervisors, coworkers and themselves
  • Maintain a thorough knowledge of current guest services, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area to answer any questions guests may have to the best of one’s ability
  • If applicable, complete a Guest Problem Resolutions (GPR) form on any issues (solved or unsolved issues) and follow-up on issues as needed (if computer access is not available give information to admin support)
  • Maintains cleanliness and organization in all work areas
  • Uphold appropriate departmental standards of quality/timing
  • Uphold and ensure compliance with all company and departmental policies and procedures
  • Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately
  • Attends all scheduled employee meetings and brings suggestions for improvement
  • Willing and timely execution of other duties as delegated by leadership
Physical Requirements:

  • Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods
  • Ability to use hotel point-of-sale computer systems
  • If applicable, must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels
  • Ability to perform repetitive tasks with accuracy
  • Ability to lift, carry, pull and push up to 50 lbs. repeatedly throughout a shift
  • Ability to read, write and communicate effectively in English, both written and verbal
  • May be exposed to mechanical, electrical, chemical and fume hazards
  • Ability to maintain compliance with Sea Island’s Company Resort Professional Image Policy
