Explore new opportunities at The Club at Kalea Bay, a private club in Naples, Florida. The Club offers all the features of a five-star resort, including three pools, expansive decks and two restaurants: Salt & Oak and the Driftwood Café. We are looking for a Chef de Tournant to join our outstanding culinary team. Under the direct supervision of the Executive Chef and Chef de Cuisine. The Chef de Tournant will be responsible for:
  • Preparing or directly supervising kitchen staff responsible for the daily preparation of soups, sauces and "specials" to ensure that methods of cooking, garnishing and portion-sizing are as prescribed by standardized recipes.
  • Assists the Executive Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production.
  • Assists the Management Team with supervision and training of employees, sanitation and safety, menu planning and related production activities.
  • Consistently maintains standards of quality, cost, eye appeal and flavor of foods.
  • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Prepares reports, arranges schedules and costs menus and performs other administrative duties as assigned by the Executive Chef when requested.
  • Personally, works in any station as assigned and needed.
  • Assists in maintaining security of kitchen, including equipment and food and supply inventories.
  • Assists in food procurement, delivery, storage and issuing of food items.
  • Coordinates buffet presentations.
  • Checks mise end place before service time and inspects presentation of food items to ensure that quality standards are met.
  • Understands and consistently follows proper sanitation practices, including those for personal hygiene.
  • Performs other appropriate tasks assigned by the Executive Chef or Chef de Cuisine.
  • This is a fulltime position and regularly requires long hours including weekends and holidays.
  • This is a fulltime year-round position with benefits and competitive pay commensurate with experience.

Education/Experience:
Degree or college diploma or equivalent in food and beverage management and/or hotel management is preferable.
Food hygiene certificate.
Supervisory experience working in a high-quality restaurant/establishment.
Experience in managing people and motivating a team.
Health and safety experience desirable.
