SUMMARY
Plans menus, prepare and cook meals. Ensures kitchen management and inventory control.
JOB DUTIES
- Plans menus; prepares cooks and serves meals and snacks to meet USDA standards.
- Attend mandatory training that identifies essential to the position.
- Identify special needs for consumers for allergies.
- Maintains kitchen inventory and orders supplies within budget guidelines.
- Determines time and sequence of cooking operations to meet meal-serving hours.
- Washes dishes, clean kitchens, and kitchen equipment.
- Researches and prepares culturally appropriate foods.
- Prepares snack trays and specialty foods for special events.
- Provides accountability and receipts for food purchases.
- Maintains kitchen facilities in compliance with OSHA regulations.
- Stocks food items on appropriate shelves with accurate labels.
- Food items must be thawed in an appropriate manner (not at room temperature).
- Responsible for management of foodservice delivery. Maintains all records to meet licensing/certification standards.
- Assists with data for foodservice (child nutrition) state records by working with the data specialist to report menus and consumer meal records.
- Disseminates nutritional information to residential consumers.
- Develops activities to teach nutrition to youth in coordination with the treatment team and consumers.
- This position may at times function as a Residential Aide when needed.
- Perform other job-related duties as assigned.

- Familiarity with human resources policies and procedures.

- Skill in operating personal computers utilizing a variety of computer software.
- Skill in managing multiple priorities and tasks concurrently and meet deadlines.

- Skill in establishing and maintaining cooperative working relationships with other employees.
- Ability to work independently as well as with teams.
- Strong understanding and sensitivity to diverse cultures and lifestyles with demonstrated experience working effectively with Alaska Native Populations.
MINIMUM QUALIFICATIONS (Education & Experience)
- High school diploma or equivalent.
- Five (5) years of experience in institutional style cooking and management.
- Certified State of Alaska Food Protection Manager or ability to obtain within 30 days of hire.
- Complete CPR and First Aid training within thirty (30) days of hire.
- Must complete Non-Violent Crisis Intervention training within one (1) year of hire date. (RESPECT TRAINING)
PREFERRED QUALIFICATIONS (Education & Experience)
- Technical or vocational training preferred.
- Certified Food Protection Manager
WORKING ENVIRONMENT

The work is generally sedentary, requiring routine walking, standing, bending, and carrying of items weighing less than 50 lbs. The office is a non-smoking facility with outside smoking areas. Works in an environment where protection of consumer confidentiality is essential. Personal Protective Equipment will be provided where/when needed.
SPECIFICATIONS
Driving Requirements:
This position will (or may) require you to frequently (or incidentally) drive both an FNA-owned vehicle and your personal vehicle for FNA business. To drive an FNA-owned vehicle with consumers in the vehicle, an individual must be at least 25 years of age. Consumers may only be transported in FNA-owned vehicles and may not be transported by an employee in a personal vehicle.
Supervision Received:
Position receives direct supervision from the Program Director of Graf; however, the incumbent is expected to effectively perform day-to-day activity as denoted within the job description. Work will be monitored through weekly meetings, monthly reports, and regular communication with the Director. General guidelines for operations are based on program requirements and the general policies and procedures of FNA.

Position Impact:
Impact at the program level is high. The program’s level of compliance with program standards is directly affected by the effective performance of duties, especially as they relate to providing services to divisions and programs.
Contacts:
Contacts include frequent contact with consumers of varying needs, contact with other program staff as well as kitchen supply vendors.

Continued employment status will be contingent upon satisfactory completion of a criminal background investigation and the pre-employment drug testing process. Where required, continued employment status (post job offer) will be contingent upon employee providing certification of annual tuberculosis (TB) screening and medical certification that employee does not, because of infectious or communicable disease, pose a direct threat or significant risk to the health and safety of program participants or others in the workplace.
