In this opportunity with Enso Village, you will work with the staff in the garden, kitchen, dining and care/care support to put together nutritious, bold and mellow dishes, with a bit of umami now and then.

You hire and orient your team to the kitchen and culture to inspire them, and your efforts are borne out in retention stats. You leverage local farms, fisheries, dairies, wineries, negotiating both short- and long-term contracts. You understand our focus on sustainable efforts, designing both approaches and metrics to monitor your efforts. You are focused on continuous improvement and this focus bears fruit in costs and efficiencies.

Responsibilities:
- Leads the kitchen function and team with a focus on creating a world-class, Sonoma County dining experience for Residents and their families, our team and the broader community
- Designs menus with a focus on cost-effective ingenuity, using the kitchen garden and local food suppliers whenever possible and practical
- Leverages relationships across the Zen center network, including the Greens Restaurant and Green Gulch farms, to interpret and reflect food and service traditions and philosophies as appropriate
- Partners with the nourishment leader and dietician to ensure nutritional meets for various populations are met
- Responds to feedback from residents for various dining and bistro menu additions
- Executes the food and service aspect of special events and functions, including resident request for private, catered dinners
- Ensure cost-effective management of kitchen budget with a focus on sustainability
- Develops annual operating budget, including ingredients and supplies, and partners with the VP Operations and Nourishment leader to track monthly expenditures
- Interprets sustainability efforts and ensures composting, waste reduction and effective resource management
- Tracks costs and pricing to ensure increase in kitchen costs are reflected in dining and bistro transactions
- Seeks forward-looking, innovative approaches to food preparation in an attempt to drive sustainability, reduce costs and align with Enso Village principles
- Selects and manages vendors, negotiating contracts and holding vendors accountable to agreements and quality standards
- Participates in selection and implementation of Point-of-Sale system
- Defines business requirements and helps with selection and implementation of POS for dining services
- May act as admin of system if required
- Partners with Facilities Director and Garden Manager to design and maintain kitchen garden
- Participates in selection and number of plantings to facilitates menu creation, including seasonal rotation of vegetables
- Organizes kitchen staff to assist in planting, weeding and tending the garden
- May help with budget preparation for the kitchen garden
- Manages kitchen and dining staff
- Hires, onboards, educates and manages kitchen staff, including Sous Chef(s), Rounds Chef(s) and other kitchen team members
- Ensures team understands recipes, plating and service standards
- Organizes team to ensure shift coverage
- Partners with HR team to handle team recognition and performance issues
- Maintains food safe and sanitary work environment, in compliance with DHS guidelines
- Remains apprised of and interprets CA/DHS law regarding safety and sanitary food-processing and handling requirements
- Designs and executes processes to ensure compliance with food and personal safety standards
- Orders safety equipment and uses tools/resources to ensure education and learning of all new team members

Background Requirements
Bachelor’s degree in culinary science and a minimum of 8 years’ experience working as an Executive of Head Chef is required. A commensurate combination of education and experience may substitute. Must be completely familiar with food safety standards. Seeking a culinary professional that enjoys keeping up with cooking and dietary trends and best practices, particularly in serving an aging population. Previous experience with vegetarian and vegan culinary traditions are required. Excellent record of successful kitchen management is required, with the ability to lead a team of chefs and kitchen staff across multiple shifts. Prior experience providing education and learning to kitchen and dining team is required. Customer service perspective is required, with the ability to identify and resolve issues quickly. Must be able to multi-task and delegate efficiently. Must have a food service manager certification (Servsafe or other.)
Based upon experience, salary range $110,000-$125,000.
A combination of experience, practical training and education may substitute.
Physical Requirements
- Must be able to spend many hours standing, walking, bending and stooping
- Exposure to hot temperatures, open flames, hot ovens, kitchen cleansers, disinfectant soap, etc.
- Ability to lift up to 30 pounds
