The Cook prepares and serves nourishing and attractive meals and other foods as required to support the menu specific to diet orders and other center events.
MAJOR WORK ACTIVITIES:
- Prepares meals items in accordance with menu production/preparation schedule. This also involves preparing and prepping foods needed for the next day.
- Follow any and all standardized recipes and adhere to therapeutic restrictions.
- Can identify safe hot and cold food temperatures for cooking, holding and storage.
- Stores food with appropriate covering, labeling, dating at the appropriate temperature.
- Follows guidelines for safe food handling and when preparing and serving food.
- Monitors and records required temperatures of prepared items. Ensures that thermometer is in proper calibration prior to taking temperatures.
- Monitors and records temperatures of coolers and freezers and records on temperature logs.
- Pulls items needed for thawing 3 days in advance according to menu posted and follows HACCP guidelines.
- Maintains a clean and sanitary work area. Follows cleaning log and any other assigned cleaning duties.
- Prepares and loads food carts in preparation of dinner no sooner than 45 minutes prior to dinner service (PM Cook).
- Prepares and loads food carts for delivery no later than 8:30am. Prepares staff lunches as ordered, Monday-Friday (AM Cook).
- Supervises Dining Services Department in absence of Dining Services Supervisor.
- Discards leftovers according to set policy and Health Department Guidelines.
- Works in a safety-conscious manner, which ensures that safe work practices are used in order not to pose a risk to self or others in the workplace.
- Any other job duties as directed by Dietary Supervisor.
KNOWLEDGE, SKILLS AND WORKING CONDITIONS:
- Knowledge and practice of food safety to include but not limited to food handling, HACCP, prep, etc…
- Knowledge of kitchen equipment (Slicer, Mixer, Steamer, Food Processor, Ovens, Fryers, Flat Top Grill.).
- Ability to read and follow menus and recipes.
- Lifting 50 pounds maximum with frequent lifting and/or carrying of objects weighing up 25 pounds. Stooping, standing, walking, smelling, color vision, reaching, handling, and pushing.
- Inside with exposure to heat, cold and wet conditions.
- Ability to interact in a tactful, diplomatic, an humanistic manner with residents, families, visitors, and co-workers to provide a safe, efficient, and therapeutically effective caring environment which ensures the self-respect, personal dignity, rights and physical safety of each resident and center guest.
Education: High School Diploma or GED.
Licensure/Certification: ServSafe Certification Preferred but not required.
Experience: 6 Months to 1 Year experience in an institutional setting. Completion of a food handlers course preferred. (i.e.. Serv Safe).
