Title: Executive Sous Chef
Reports to: Executive Chef
Overview:
The Executive Sous Chef is responsible to assist the Executive Chef for over all kitchen operation as a successful independent profit center, ensuring maximum guest satisfaction through planning, organizing, directing, and controlling the kitchen operation and administration.
Exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Also assists in supervising all kitchen areas to ensure a consistent, high-quality product is produced.
Job Responsibilities:
- Directs food preparation and collaborates with Executive Chef.
- Directs and supervises all staff in the absence of the Executive Chef
- Helps in the design of food and non-alcoholic drink menu.
- Produces high quality plates, including both design and taste.
- Oversees and supervises all kitchen staff including sous chefs, cooks, dishwashers.
- Assists with menu planning, inventory, and management of supplies.
- Ensures that food is top quality, and that kitchen is in good condition based on cleanliness, organization, and proper food storage.
- Keeps stations clean and complies with food safety standards.
- Offers suggestions and creative ideas that can improve the kitchen’s performance.
- Prepares food properly.
- Schedules staff shifts.
- Trains new employees.
- Orders food supplies.
- Monitors and maintains kitchen equipment.
- Solves problems that arise and seizes control of issues in the kitchen.

Education and Experience Requirements:
- High school diploma or equivalent
- Formal culinary training is preferred or equivalent years of experience in the industry
- 5 plus years kitchen experience with 2 years supervisory experience

- Team player that will be able to help at other properties if needed for the growth of the whole company of Russell Lands
While performing the duties of this job, the employee is regularly required to stand, walk, talk and/or hear. The employee is frequently required to use hands to handle or feel. The employee may also occasionally lift and/or move up to 50 pounds. The temperature of the environment may fluctuate drastically from very cold to very warm temperatures.
