As the Assistant Executive Steward, you will maintain a sanitary environment for food and beverage preparation and storage as well as provide clean service ware and utensils for the entire food and beverage operation, including banquets. You will assist the Executive Steward with leadership and overall supervision of stewarding staff and processes to maintain control over all event organization and set up, ensuring proper cleaning and storage.

What you will be doing:

• Assist with selecting, training, scheduling, supervising, and counseling all members of stewarding department in accordance with established standards for safety, productivity, and performance. Delegates dish and equipment washing and silver polishing activities.
• Ensures staff is maintaining the cleanliness of the back of the house areas. Manages general cleaning schedule so that the food service areas meet or exceed the health inspection requirements.
• Maintains the inventory and coordinate the distribution of all big four items: china, glassware, and silver, which also include visual inspection to ensure cleanliness and safe transportation.
• Assist with planning and organizing ahead of time for the upcoming functions and to order glass, china and silver ware as and when needed or nay other equipment as required for a function.
• Assist in conducting monthly staff meetings.
• Daily walk through of all back kitchen area and to ensure the general cleanliness of the kitchen and back banquet hallways.
• Controls the equipment storage areas and the issuance of equipment for the Food Service department.
• Performs general/routine cleaning tasks using standard hotel cleaning products as assigned to adhere to health standards.
• Performs other duties as requested.

What we are looking for:

• Ability to visually inspect cleanliness.
• Ability to count service ware during inventory.
• Ability to push/pull service carts weighing up to 500 lbs.
• Ability to grasp, hold, and carry items weighing up to 40 lbs.
• Ability to stand and move throughout the facility for long periods of time
• Bachelor in Hotel Management preferred
• Two years or more of managerial experience required.
• Working knowledge of kitchens, equipment, food production, sanitation and safety. One year as Assistant Executive and/or Stewarding Supervisor required.
